Sesame Ponzu Slaw

 ¼ green cabbage
 1 carrot
 1 tbsp soy sauce
 1 tbsp ponzu vinegar
 2 tsp monkfruit sweetener
 1 clove garlic
 1 tsp black sesame seeds
 1 tbsp sesame oil
 1 tbsp pickled ginger

Mix ponzu vinegar, soy sauce, garlic and sweetener in a microwave safe bowl. Microwave 30-60 seconds until hot.

Combine all ingredients in a medium bowl and refrigerate a few hours to allow flavors to develop.
