Saag Paneer

This makes a HUGE batch. Freeze sauce in ice cube trays or freeze dry to keep for later.

 2 onions
 16 oz baby spinach
 16 oz other greens
 3 cups tomato sauce or diced tomatoes
 1 tbsp kosher salt
 ¼ cup cumin seeds
 2 tbsp crushed garlic
 2 tbsp ginger paste
 ¼ cup coriander powder
 2 tbsp ground turmeric
 2 tsp red chili powder
 ¼ cup garam masala
  cup canned green chilis
 2 tbsp ghee
 2 tbsp sugar
 2 lbs paneer

Cook greens in pressure cooker on high for 10 minutes using 1 quart of water. Scoop greens from water using a slotted spoon and set aside. Discard water.

Note: The greens may need to be cooked in multiple batches depending on the size of your pressure cooker.

Heat ghee in the pressure cooker over saute or on stovetop, if your pressure cooker pot can be used on the stove.

Add ginger, garlic and dry spices and cook just until fragrant.

Add the remaining ingredients to the pan, including the cooked greens. Blend until completely smooth using an immersion blender. You can also puree in a blender and pour back into the pan.

Cook on medium heat for 5 minutes to blend flavors.
