Brooklyn Style Pizza

I modified this crust recipe from a recipe I found on the web and wanted to make sure my changes were recorded because it turned out perfectly!

 5 ¾ cups all purpose flour
 ¼ cup dough enhancer
 2.50 tsp salt
 1 tsp instant dry yeast
 2 tsp sugar
 1 cup tap water
 1 ¼ cups distilled water
 1 tbsp olive oil
Mix Dough (10 minutes)

Place distilled water and tap water in a mixing bowl fitted with a dough hook.

In a separate bowl, whisk together all dry ingredients.

Add dry ingredients to the water and knead until wet and dry are fully incorporated. Add the oil and knead for an additional 4 to 5 minutes until smooth and elastic.

Proof Dough (1 to 3 days)
Warm and Shape Dough (2 to 4 hours)
Bake (5 to 10 minutes)

Place pizza stone on the TOP RACK of your oven and preheat to 550 for a FULL HOUR. You want that puppy HOT.
